Cookie Recipes
Cookies are hard baked confections which are typically shortbread
in nature (unleavened). The structure of a cookie is formed by
the carmelization of sugar and a shortening (typically butter or
crisco) intermingled with flour. Cookies can be made "cakey" by
adding eggs and crumbly by adding more flour. Vanilla is a popular
cookie flavoring. Cooks often add nuts, dried fruits or chocolate
pieces to add contrast to the confection. The name "cookie" comes
from germanic roots, "gecocht" or cooked hard.
